Caprese Salad


Yields 4 servings




ž   ½ lb. tomatoes

ž   fresh bay leaves

ž   5 tbsp olive oil

ž   15 oz. aprox. fresh mozzarella cheese

ž   oregano




Rinse tomatoes and slice them not too thin and not too thick. Slice the mozzarella the same way. Use a flat wide serving dish and arrange the tomato and cheese slices alternately and decoratively. Garnish with oregano and place a bay leaf (previously washed) over each slice of tomato and cheese. To finish, sprinkle some oil on top.
