Tomato and Goat Cheese Pudding


Yields 4 servings



ž   2 eggs

ž   2 1/2 tbsp skimmed milk

ž   4 tomatoes

ž   4.5 oz. fresh goat cheese

ž   oregano

ž   salt and pepper to taste





Rinse tomatoes and slice them in thin films. Place them in a baking dish. Dice the goat cheese in cubes and scatter them over the tomato. Beat the eggs in a bowl and slowly blend in the milk. Season with a pinch of salt and pepper. Then pour the mixture over the baking dish. Garnish with oregano and bake at 180ºC for 30 to 45 minutes. Serve as you wish: hot, warm, or cold,
