Stuffed Tomatoes



Yields 4 servings




ž   4 full tomatoes

ž   7.5 oz. mozzarella cheese

ž   5.5 oz. uncooked ham

ž   5.5 oz. cooked ham

ž   4 egg yolks

ž   salt

ž   oil

ž   paprika

ž   pepper




Cut off the top of tomatoes and scrape the pulp out of inside. Season with salt, pepper, and paprika. Chop the tomato pulp and the ham in cubes, and add the beaten egg yolks with a pinch of salt. Stuff the tomatoes with the mixture. Cover with the grated cheese and bake to 170°F for about 15 minutes. Place them in a serving dish garnished with some oil, salt, and pepper on top.
